DETERMINAÇÃO DO TEOR DE ÁCIDO ASCÓRBICO DO MAMÃO ( Carica papaya, L. 1753)

Abstract

The authors studiecl the contents of ascorbic acid in the papaw (Carica papaya L. 1753), and its distrilmtion in four differcnt portions of the fruit: a) the distai internai ; b) ih e distai externai; c) the proximal internai ; d) anel the proximal externa I portion.Vorking with 38 differcnt samplcs of ripe fruits and dosing thc ascorhic acid contents in the fonr portions of each sample, they found the following results: 1) The average contents of ascorbic acid in the whole fruit is 71,17 mg per 100 g; 2) The contcnts of dehydroascorbic dehydroascorbic acids they obtained the following figure: 75.51 mg of vitamin C for 100 g of the whole fruit 3) Summing the ascorbic and dehydroaascorbic acids they obtained the followwing figure: 75,51 mg of vitamin C for 100 g of the 'whole fruit; 4) There are no statistically significant differences in the amount of vitamin C in the four different portions examincd although there is a slight tenclency for less in the distai externai portion of the fruit; 5) There is practically no foreign Tillmans-reducing· matter in the papaw. dispensing the double differential closage, with the intermediate destruction of ascorbic acid by the ascorbic acid oxidase.
