Abstract

This paper is a report the author was asked to present on subject nº 4, ofthe 7th Brazilian Congress of Hygiene, which treated the problem of Food Hygieneand was distributed under the following sub-titles: a) food surveys andsurveys on the nutritional status of the Brazilian population. specially regardingthe rural zones; b) studies o f the· composition o f Brazilian foods, specially themineral and vitamin contents o f fruits and other vegetables; c) the milk problem:its production, sanitation, industrialization and distribution; d) suggestions for the correction of the main nutritional deficiencies of the Brazilian population.In this paper these various topics are treated by the author in a general and synthetic maner.
