Abstract

Produced in Hispania Baetica cetariae, the garumand its derivatives were delicacies introduced in the Latin diet for your gastronomical and medicinal qualities, and by its status. In the article, we will describe the continuity of these Phoenician and Punic brine practice stablished in the Phoenician city of Gadir, maintained in the Roman Gades and absorved by the roman diet.
