Na segunda metade do século XVIII, as potências metropolitanas europeias conseguiram superar o domínio que o Iêmen até então exercera sobre a oferta mundial de café. Duas colônias do Novo Mundo se destacaram nessa transformação, ambas recorrendo ao emprego em larga escala do trabalho escravo africano: Suriname, pertencente aos holandeses, e Saint-Domingue, a principal colônia francesa do Caribe. No entanto, o crescimento do Suriname teve vida curta, logo superado pelo salto produtivo de Saint-Domingue. A comunicação explora as trajetórias divergentes dessas duas colônias, com as lentes focadas nas condições ambientais de operação de suas fazendas de café.
