Tourism at the table: on the current offer of Barreado in the coast of Paraná State

This article aims at understanding the current offer of Barreado (a traditional dish from the coast of Paraná State) based on the analysis of restaurants that serve the dish in the cities of Antonina, Paranaguá and Morretes, all in the State of Paraná, thus contributing to the discussion of gastronomic tourism. For this purpose, documents were studied and Oral History interviews were made with owners and managers of restaurants, traditional cooks and tourism managers of the State of Paraná and the relevant municipalities; such research resulted in a doctoral thesis defended in 2008 at the Pos-Graduate Program in History of the Federal University of Paraná.Downloads
